Crust
1 ½ cup chopped pecans,
1 cup shredded coconut (unsweetened)
8-10 pitted medjool dates (150g so adjust depending on the dates you are using)

Filling
12 pitted medjoo dates (200g),
1 ¼ cup Milk of your choice,
3 Tbsp Tapioca starch,
1 Tsp Vanilla,
¼ Tsp sea salt,
1 ½ cup pecan halves.

Preheat your oven 350F.
For the crust, combine all the ingredients in a your Vitamix machine and blend until sticky.
Press the mixture firmly into a square pan 8X8 lined with parchment.
For the filling, blend the dates, milk, starch, vanilla, salt until smooth.
Add 1 cup of the pecans and pulse them in.
Spread on top of the crust.
Sprinkle the remaining ½ cup pecans on top and press them lightly.
Bake 40-45min until golden brown.
Remove from the oven, let it cool then put it in the fridge overnight.

There is so many choices when choosing a stroller. I was talking to a pregnant friend about that and I thought I’d share my experience with you.
We all have specific criteria when choosing our stroller. I was looking for a product that was going to be resistant to last to a possible other child but also that would be strong enough to allow Zak and I to enjoy our regular activities and adventures. No wonder this model is named the all-terrain stroller. Of course, I also wanted a nice model that I would be able to customize. I found exactly what I needed by choosing the Buffalo from Bugaboo. The Buffalo is a spacious and comfortable stroller for Rania but is also convenient for me since it contains several storage options and is also easy to fold. Here are some technicalities that attracted me:

  • The spacious seat is suitable for children up to 17kg,
  • 4 large wheels,
  • Little hook to hang my bag,
  • Machine washable wraps,
  • The storage basket,
  • The adjustable handlebars (Without that option, Zak would always have back pain),

Finally, each Bugaboo stroller comes with a multitude of options so that each person can customize his stroller according to his needs but also his tastes. Indeed, it is possible to choose the color of certain elements on the stroller, to add options like a tablet, a nest of angel or a compact carrying bag.

A lot of people tell me that they would like to consume less meat and be able to substitute it with something else like tofu. Most of the time, when those people buy tofu, they do not know what to do with it and ask for recipe ideas. Here is a complete meal idea that you could achieve with tofu.

You will need a block of firm tofu. I cut mine into cubes and let it drain between paper towels. In the meantime, I preheated the oven at 400F in which I will bake the tofu for 20 to 25min. We want the cubes to come out golden.
While the tofu is in the oven, I cut the vegetables I wanted to use (broccoli, green pepper and green zucchini) and sautéed them with sesame oil and a touch of soy sauce. I like to leave my vegetables crunchy.
Then I prepared the sauce that will wrap my tofu:
– Peanut butter,
– Soy sauce,
– Crushed garlic clove,
– Fresh ginger minced very finely,
– Sambalolek or any hot sauce (to taste),
– Sesame oil,
– Coconut sugar or honey,
– Sesame seeds (optional).

I made enough to be able to coat my tofu but also to keep a little and to serve it on every plate.
Once your tofu is ready, take it out of the oven and let it cool before wrapping it with a few spoons of this creamy sauce. Let the mixture rest for at least 10 minutes to allow the tofu to soak up the sauce.
During that time, I used a cauliflower to make a kind of rice / couscous by rapping cabbage or easier, by putting chopped cabbage heads in a low intensity blender until obtaining a texture similar to rice. Once it’s done, heat a large pan with sesame oil and I sautée the cauliflower rice as if it was fried rice (we are looking for the brownish color).
Last step: I also sautée the tofu that I left marinated for a few minutes to get the beautiful golden color.
I served it all on a plate by adding a little sauce to be able to have a beautiful marriage of flavors.
We really like this peanut marinade and we really liked the cauliflower rice.

When I received my Samsung Gear Sport, I did not know what to expect but I never imagined it would have so many options. I must say that the only “smart” watch that I had before this one only used to calculate my heart rate during running. It features options like calorie counting, supervised workouts, direct payments, music and more. It is a sports watch, certainly, but it accompanies me in my daily life. Moreover, it is possible to change the bracelet of this watch so that it fits better with the style of each one. For my part, I prefer to keep the belt that comes with it because it allows my watch to be resistant to water (up to 50 meters), I was also very eager to test this option on my trip.

One of the special features I love about the Gear Sport is the rotating frame that allows me to navigate through the various applications with ease. I find it intuitive and easy to use. Besides, the watch already comes with several applications but you can download more if you want like Uber or Spotify. Another peculiarity that I find interesting is that this watch allows me to track the calories I consume during the day. Everything is of course combined with the personal data that I previously recorded but also with my training and daily activities. Usually, I do not calculate my calories but since I have set a specific goal, I need to have this data available to plan my meals and snacks throughout the day and reach my goal. #PersonalVictory. If you have a goal of weight loss or weight gain for example, this option can be interesting too.

I like to go to the gym but often, I do workouts at home, outdoors (especially when the weather is nice) or when I’m traveling. The Gear Sport offers me over 60 training guides that I can realize where I am using my Samsung Galaxy S8 phone or a Samsung TV. These different types of training target my goals and can fill yours too: cardio, muscle training, yoga etc. My watch and my phone illustrate the movements I have to do and my evolution during the training. It shows me, for example, my heart rate, the time elapsed during training or the number of calories I spent during my activity.

I am very satisfied with my new Samsung Gear Sport. It allows me to stay connected despite my busy days, which is a great victory for me. The different applications allow me to view my calendar, take e-mails, text messages, phone calls, etc. So I can keep an eye on just about everything from my wrist. Finally, I find that the many training options, the rotating frame that facilitates navigation, the cardio sensor and the aquatic option are highlights of this model.
