Healthy banana bread

Who doesn’t love Banana Bread? Always on the quest for healthy snacks, I tried this recipe that we immediately adopted.

You’ll need:
1/3 cup melted coconut,
1/2 cup mapple or honey,
2 eggs,
1 cup mashed ripe bananas (about 2 1/2 bananas),
1/4 cup of milk (I used almond milk),
1 tsp baking soda,
1 tsp vanilla,
1/2 tsp salt,
1/2 tsp cinnamon,
1 3/4 cup whole wheat flour,
Optional: walnuts or chocolate chips.

Preheat oven 325F.
Beat the oil and apple together with a whisk.
Add the eggs and beat.
Whisk the mashed bananas and milk.
Add the baking soda, vanilla, salt, cinnamon, and whisk to blend.
With a big spoon, stir in the flour until combined.
Add walnuts if you want.
Bake 55 to 60 min.

Yes, coconut = coconut oil
and by apple I ment Mapple oops. Sorry!

Hello,
Thanks a lot for sharing this recipe with us. I’m actually on a challenge of detoxing my body of reffined sugar and I’m on day 22nd. I will definitely give this bread a try. 😊😋😊

I’m trying to cut refined sugar from my life! Not always easy, especially when you go out.

Hello,

I haven’t tried it yet because I’m avoiding all kind of added sugars. Not only I’ve been cutting refined sugar but also honey, maple syrup and other kind of sugars. I allow myself to take fruits though. This is temporary. I will reintroduce sugar in 3 days but I want to make sure I won’t take as much sugar as I used too. The sugar addict that I am finds it hard to avoid refined sugar so I understand the struggle. Because it’s difficult to avoid sugar when eating outside, I have avoided to do it most of the time. I am travelling in a couple of days so I will try this bread but not before a couple of weeks. I will let you know when I do. Thanks again! Have a great week! 😊😊😊

Hi Dania,

Oh yeah, I get you! It’s so hard to avoid sugar when you eat outside.
But I think that you could try this recipe without adding sugar. If the apples are sweet enough, maybe it would taste good!

Good luck with this challenge (of cutting all kind of sugar)!
